First, food proteins' and food polysaccharides'  chemical structures will be reviewed. Then their structure and functional  relationship and their interactions will be discussed in detail. Finally, their  applications in different areas, including food industry and biomedical industry  will be introduced. Characterization methods borrowed from synthetic polymers  will be discussed.
